Sunday’s Elaborate Salad

There is some evidence, but so far no theory, to support that this salad has potent mood-enhancing effects.  In any case, it’s tasty.

Olive Oil

Salt and Pepper

Balsalmic Vinegar 

1 Large, Firm Cucumber

2 Carrots

1 Poblano Pepper

1 Medium Red Onion

3 Small Haas Avocados

2 Very Ripe Kiwi Fruit 

Drizzle olive oil in nine circles around the bottom of a mixing bowl.  Add several generous shakes of salt, and a couple shakes of black pepper.  Add a splash or two of balsalmic vinegar.  Slice cucumber into medallions.  (I prefer to peel cucumbers length-wise in four or five strips, leaving about 1/4 inch of peel between strips.  This keeps some nutrients of the peel but doesn’t add any bitter taste.  Plus, it looks kind of fancy.)  Cut carrots into short slivers.  Thinly slice red onion and chop coarsely.  Dice the poblano into tiny bits.  Chunk up the avos.  Halve kiwis and mush into bowl.  Mix everything to coat.  Serves 1-6.  Enjoy!
